INGREDIENTS
Dry Ingredients
- ½ cup all-purpose flour for coating

Meat
- 4 pounds beef short ribs
Oil
- 2 tablespoons vegetable oil
Liquids
- 💧 1 cup water
- 💧 4 tablespoons water
Vegetables
- 🍅 1 cup stewed tomatoes
- 🧄 1 clove garlic, minced
- 🥔 6 potatoes, peeled and cubed
- 🧅 3 onions, chopped
- 🥕 6 carrots, chopped
Thickener
- 1 ½ tablespoons all-purpose flour
STEPS
Combine ½ cup flour, salt, and ground black pepper in a bowl. Roll the beef ribs in the seasoned flour.
Heat oil in a large pot or Dutch oven. Brown the ribs well on all sides.
Pour in 1 cup boiling water, stewed tomatoes, and minced garlic. Reduce heat to low, cover, and simmer for 90 minutes, adding more water if needed.
Add potatoes, onions, and carrots to the pot. Continue simmering for another 30-60 minutes, or until vegetables are tender.
Remove meat and vegetables. Dissolve 1 ½ tablespoons of flour and 2 tablespoons water for every cup of liquid remaining. Add to the pot, stir, and cook until thickened. Pour over the meat and vegetables.
