INGREDIENTS
Main Ingredients
- 🥓 300g pork belly
- 🥚 3 eggs
- 🍚 3 bowls of cooked rice
- 2 slices of ginger
- 1 green chili
- 🍄 1/3 pack enoki mushrooms
- 1 tbsp oligosaccharide
- A pinch of sesame seeds
Braising Sauce
- đź§‚ 3 tbsp soy sauce
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1/4 tsp black pepper
- đź’§ 1.5 cups water
STEPS
Boil the eggs, peel the shells, and set aside. If available, substitute with 10 quail eggs for better flavor.
Cut the pork belly into bite-sized pieces. Blanch in boiling water with ginger slices to remove excess fat, then rinse under cold water and drain.
In a pan, combine all braising sauce ingredients and bring to a boil.
Add the blanched pork belly, boiled eggs, and green chili to the sauce. Simmer until the sauce reduces by half.
Add enoki mushrooms and oligosaccharide to the pan. Continue simmering until the mushrooms are tender and the sauce thickens.
Serve the braised pork belly over bowls of cooked rice. Garnish with quartered eggs, a drizzle of sauce, and a sprinkle of sesame seeds.
