INGREDIENTS
Fish
- 🐟 2 cleaned rockfish (400g)
Vegetables
- 🧅 5 cm leek
- 4 slices ginger
Seasonings
- 🍶 2 tbsp sake
- 2 tbsp mirin
- 🧂 1 tbsp sugar
- 🧂 2 tbsp soy sauce
- 💧 100 ml water
STEPS
Slice the leek lengthwise, remove the core, and cut into thin strips. Soak in water for 5 minutes, then drain to make shiraga-negi.
In a frying pan, add all the seasonings (sake, mirin, sugar, soy sauce, and water) and heat over medium heat until boiling. Add the rockfish and ginger slices.
Cover with a drop lid and simmer on low heat for about 15 minutes.
Serve the fish on a plate, pour the sauce over it, and top with shiraga-negi.
