    • 🄬 400g daikon radish (10cm)
    • 2 slices ginger

    • Water for boiling daikon
  • Seasoning

    • 400cc water
    • 3 tbsp sake
    • šŸ§‚ 1 tbsp sugar
    • 1 tbsp mirin
    • 2 tbsp soy sauce

Cut the daikon into 2cm thick slices and halve them. Place the daikon in a pot with enough water to cover, bring to a boil, then simmer on low heat for 15 minutes. Drain the water.

Bring a pot of water to a boil, blanch the yellowtail briefly, and drain the water.

In a pot, add ginger and the seasoning ingredients (water, sake, sugar, mirin, soy sauce). Heat over medium heat until boiling.

Add the yellowtail and daikon to the pot, cover with a drop lid, and simmer on low heat until the broth reduces to about 1/4.
