INGREDIENTS

- 1 pound bulk breakfast sausage
Dairy
- 🧀 1 cup shredded Cheddar cheese
- 🧀 1 cup shredded mozzarella cheese

- 4 large bell peppers
- 4 cups frozen shredded potatoes
Eggs
- 🥚 4 large eggs, beaten

STEPS
Preheat the oven to 350 degrees F (175 degrees C).
Heat a skillet over medium-high heat and cook breakfast sausage until browned and crumbly, about 5 to 7 minutes. Set aside.
Combine shredded cheddar and mozzarella cheese in a separate bowl. Set aside.
Bring a pot of water to boil. Prepare bell peppers by cutting tops off and removing seeds. Parboil peppers for 4 to 5 minutes, then drain and cool.
Heat olive oil in the skillet. Cook shredded potatoes and onions until golden brown and crispy, about 5 to 7 minutes.
Combine sausage, half the cheese blend, beaten eggs, salt, and pepper with the potatoes. Mix and set aside for 5 minutes.
Stuff bell peppers with the mixture, leaving space for the reserved cheese. Place peppers in a broiler-safe baking dish and cover.
Bake covered for 15 minutes, then uncover and bake an additional 10 minutes until eggs set and peppers are tender.
Top peppers with the reserved cheese blend, broil until cheese is browned, about 4 to 5 minutes.
