INGREDIENTS
Vegetables
- 1 package (10-oz) frozen chopped broccoli
- 1 small carrot, diced
- 1 tablespoon chopped green onion
Eggs and Dairy
- 🥚 8 eggs
- 🥛 1/4 cup nonfat or low-fat milk
- 3/4 cup shredded reduced-fat cheddar cheese
Seasoning
- 2 teaspoons prepared mustard
- 🧂 1 teaspoon seasoned salt
- 1/8 teaspoon pepper
Miscellaneous
- 1/4 cup water
- nonstick cooking spray
STEPS
Combine broccoli, carrot, and water in a 10-inch nonstick skillet.
Cook over medium heat until tender, stirring occasionally to break up broccoli; drain well.
Beat eggs, milk, mustard, salt, and pepper in a large bowl until blended.
Add broccoli mixture, cheese, and green onion into the egg mixture; mix well.
Coat the skillet with nonstick cooking spray and heat over medium heat. Pour the egg mixture into the skillet and cook until eggs are almost set, about 8-10 minutes. Remove from heat.
Cover and let the frittata stand until eggs are completely set and no visible liquid egg remains, about 8-10 minutes. Cut into wedges and serve.
Optional: After removing from heat, broil the frittata 6 inches from the heat source for 2-3 minutes until completely set.
