INGREDIENTS
Protein
- 🍗 1 ½ pounds bone-in, skin-on chicken breasts
Stock and Liquids
- 2 cups chicken stock
- ⅔ cup Buffalo wing sauce
Spices
- 1 tablespoon paprika
- 🧂 1 teaspoon salt
- ½ teaspoon cayenne pepper
Carbohydrates
- 12 lasagna noodles

- 2 stalks celery, finely chopped
Cheeses
- ½ cup crumbled blue cheese
- 1 (16 ounce) container ricotta cheese
- 1 cup blue cheese dressing
- 🧀 1 (8 ounce) package shredded mozzarella cheese

STEPS
Place chicken in a single layer in a large pot. Add chicken stock, paprika, salt, and cayenne pepper. Bring to a boil, reduce heat to medium, and simmer until chicken is no longer pink in centers. Shred chicken.
Bring a large pot of lightly salted water to a boil. Cook lasagna noodles until tender yet firm, about 8 minutes. Drain and prevent sticking with cooking spray.
Heat olive oil in a skillet over medium heat. Cook celery until just softened, about 5 minutes.
Preheat the oven to 350°F (175°C).
Combine shredded chicken, celery, wing sauce, and blue cheese in a bowl. Mix well.
Prepare ricotta mixture by combining ricotta cheese, blue cheese dressing, wing sauce, salt, cayenne pepper, and egg.
Layer ricotta mixture, noodles, chicken mixture, and mozzarella cheese in a baking dish. Repeat layers 3 times, ending with ricotta mixture and mozzarella cheese.
Bake in the preheated oven for 45 minutes, until cooked through and the top is lightly browned. Cool for at least 20 minutes before serving.
