INGREDIENTS

- 🥔 4 large baking potatoes
- 🌻 1 tablespoon vegetable oil
- 🧈 ½ cup unsalted butter
- 🧂 Salt to taste
- Ground black pepper to taste
- 🧀 3 cups shredded Cheddar cheese, divided
- 1 ½ cups Buffalo hot sauce (such as Texas Pete)
STEPS
Preheat the oven to 350°F (175°C) and prick potatoes several times with a fork. Place them onto a baking sheet.
Bake in the preheated oven until potatoes are easily pierced with a fork, 90 to 120 minutes, checking for doneness after 1 hour and every 15 minutes thereafter.
While potatoes bake, heat oil in a large skillet over medium heat. Add chicken; cook and stir until chicken is no longer pink in the center and juices run clear, about 5 minutes.
Cut baked potatoes in half horizontally and scoop out the potato flesh into a large bowl. Set the skins aside.
Stir unsalted butter into the potato flesh until melted and combined. Season with salt and black pepper.
Stir in cooked chicken, 2 cups of shredded Cheddar cheese, and Buffalo hot sauce until well combined. Spoon the mixture back into the potato skins.
Sprinkle the remaining 1 cup of Cheddar cheese on top of the stuffed potatoes.
Return the stuffed potatoes to the oven and bake until the filling is hot and cheese is melted, about 20 minutes.
