    • 100g sake lees
    • šŸ’§ 2 tbsp water
    • 2 tbsp mirin
    • 3 tbsp miso

Sprinkle salt on the yellowtail fillets and let them sit for 10 minutes. Pat dry with kitchen paper.

Place sake lees in a microwave-safe container, add water, cover loosely with plastic wrap, and microwave at 600W for 30 seconds.

Mix the softened sake lees until smooth, then add the remaining marinade ingredients and mix until well combined.

Spread half of the marinade in a tray, place the yellowtail fillets on top, and cover with the remaining marinade. Wrap tightly with plastic wrap and refrigerate for 6 hours.
