INGREDIENTS

- 2 tablespoons olive oil
- 🧅 ½ large yellow onion, chopped
Meat
- 🥩 1 pound ground beef
Canned Ingredients
- 1 (16 ounce) can refried beans
- 1 (1 ounce) package burrito seasoning
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1 (8 ounce) jar mild or hot salsa
Dairy
- 4 ounces sour cream
- 🧀 2 ½ cups shredded Mexican cheese blend
Tortilla Chips
- 1 (14.5 ounce) package tortilla chips
STEPS
Preheat the oven to 350 degrees F (175 degrees C) and coat a casserole dish with cooking spray.
Heat olive oil in a large skillet over medium heat and cook onion until translucent, 3 to 5 minutes.
Add beef to the skillet, increase heat to medium-high, cook until browned and crumbly, 5 to 7 minutes. Drain oil.
Mix refried beans and burrito seasoning in a bowl, then add to beef in the skillet. Stir until well combined.
Combine condensed cream of mushroom soup and sour cream in a medium bowl.
Layer tortilla chips in the casserole dish to cover the bottom. Add 1/2 of the meat mixture, 1/2 of the soup mixture, 1 cup of cheese, and 1/2 of the salsa. Repeat layers and top with remaining cheese.
Bake in the oven, uncovered, until hot and bubbly, about 20 to 30 minutes.
