INGREDIENTS
Vegetables
- 🎃 1 medium butternut squash - peeled, seeded, and chopped into small cubes
- 1 pound fresh spinach

- 🧄 4 cloves garlic, minced

- 2 teaspoons ground cumin
- 🧂 Salt and ground black pepper to taste
Canned Goods
- 2 (15 ounce) cans black beans, drained
Condiments & Sauces
- 2 tablespoons chipotle-lime crema, or to taste

- 1 tablespoon olive oil
- 🌮 10 corn tortillas
STEPS
Preheat the oven to 400 degrees F (200 degrees C).
Toss butternut squash with olive oil, garlic, and a pinch of salt and pepper. Spread evenly over a large rimmed baking sheet.
Bake the squash in the oven until tender and slightly browned at the edges, typically 25 to 35 minutes.
Empty black beans into a small pot over low heat. Stir in minced garlic and cumin, warming the beans for several minutes until heated through. Cover and set aside.
Add water to a large skillet over medium heat. Stir in spinach in batches, sprinkling with salt, and cook until all spinach is wilted, which takes about 3 to 5 minutes.
Assemble the tostadas by topping tortillas with roasted squash, black beans, and wilted spinach, finished with a drizzle of chipotle-lime crema.
