INGREDIENTS
Vegetables
- 6 large green bell peppers
- 🧅 1 onion, diced
- 🧄 2 cloves garlic, minced
- 🍋 1 lemon - cut into wedges, for garnish (Optional)
Seafood & Meat
- 🦐 ¾ pound shrimp, peeled and deveined
- 1 ½ links of andouille sausage, diced
Grain
- 🍚 1 cup uncooked long-grain white rice
Canned & Condiments
- 3 tablespoons olive oil
- 1 tablespoon Creole seasoning
- ½ teaspoon dried oregano
- 🥫 1 (8 ounce) can tomato sauce
- Louisiana-style hot sauce (Optional)
Stock
- 2 ½ cups chicken broth
STEPS
Preheat oven to 325°F (165°C). Grease an 8x12 inch baking dish. Bring a large pot of water to a boil. Remove tops and seeds from bell peppers. Blanch in boiling water for 3 minutes. Drain on paper towels.
Heat olive oil in a large skillet over medium heat. Sauté onion until translucent. Stir in garlic, oregano, Creole seasoning, and black pepper. Add shrimp and sausage; cook until shrimp turn pink (about 5 minutes).
Stir in rice and cook for 1 minute. Pour in chicken broth and tomato sauce. Simmer until the mixture thickens, approximately 15–20 minutes.
Stuff peppers with the filling and place them in the baking dish.
Bake in the preheated oven for 15–20 minutes or until thoroughly heated. Serve garnished with lemon wedges and hot sauce as desired.
