INGREDIENTS
Protein
- 🍗 1 (4 pound) chicken, cut into pieces
Seasoning
- Salt and pepper to taste
Cooking Oil
- ¼ cup olive oil
Vegetable
- 🧅 2 onions, thinly sliced
- 🍄 ½ cup fresh sliced mushrooms
Canned Goods
- 🍅 1 (14.5 ounce) can stewed tomatoes
- 1 (10.75 ounce) can condensed cream of mushroom soup
Liquid
- 1 cup white wine
Add-ons
- ¼ cup pitted green olives
- ¼ cup black olives
- 2 tablespoons capers
- 8 ounces pepperoni sausage, sliced
STEPS
In a large skillet, heat oil over medium heat. Season chicken with salt and pepper, then brown the chicken in hot oil. Remove from skillet and set aside.
In the same skillet, sauté onions and mushrooms until translucent. Return the chicken to the skillet, then add the tomatoes, soup, and white wine.
When liquids start to simmer, add green olives, black olives, capers, and pepperoni. Cover skillet and let simmer for 30 minutes.
Preheat oven to 350°F (175°C). Remove the skillet cover and transfer the mixture into a 9x13 inch baking dish. Bake for 15 minutes or until chicken is tender and juices run clear.
