INGREDIENTS
Cake
- 🟤 2 ¼ cups packed dark brown sugar
- ⚪ 1 cup white sugar
- 🌾 3 cups all-purpose flour
- ½ teaspoon baking powder
- 🧈 1 cup butter
- ½ cup shortening
- 🥚 5 eggs
- 🥛 1 cup milk
- 1 teaspoon vanilla extract
- 🌰 1 cup chopped pecans
Frosting
- ⚪ 1 cup white sugar
- 🟤 1 cup packed brown sugar
- 🧈 ½ cup butter
- 🥛 ½ cup evaporated milk
- 1 teaspoon vanilla extract
STEPS
Preheat oven to 325°F (165°C). Grease and flour a 10-inch tube pan.
Cream together butter, shortening, brown sugar, and 1 cup white sugar until well combined. Add eggs one at a time, beating well after each. Stir in 1 teaspoon vanilla extract.
Sift together 2 1/2 cups flour and baking powder. Gradually add this mixture alternately with milk into the creamed mixture. Toss chopped pecans with the remaining 1/2 cup flour and fold into the batter. Pour batter into the prepared pan.
Bake in the preheated oven for 60 to 90 minutes, or until a toothpick inserted comes out clean. Let cake stand in the pan for 10 minutes before inverting onto a wire rack to cool completely.
To make frosting: In a small saucepan, combine brown sugar, white sugar, butter, and evaporated milk. Bring to a rolling boil and cook for 1 minute. Remove from heat, stir in vanilla, and allow to cool. Beat frosting until thickened. Spread over cooled cake.
