INGREDIENTS
Dry Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon

Wet Ingredients

- 1 cup sour cream
- 1 cup white sugar
- 1/2 cup packed brown sugar
- 🥚 2 large eggs
- 🥕 2 cups shredded carrots
- 1 tablespoon vanilla extract
Streusel Topping
- 1 cup walnuts
- 1/2 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 🧂 1 pinch salt
- 🧈 2 tablespoons salted butter
Cream Cheese Glaze
- 3 ounces cream cheese
- 🧈 2 tablespoons salted butter
- 1/4 teaspoon vanilla extract
- 1 cup confectioner's sugar
- 1 tablespoon whole milk
STEPS
Preheat the oven to 350°F (180°C). Line a 9x13-inch baking pan with foil and coat the foil with cooking spray.
Whisk together flour, baking powder, cinnamon, salt, and nutmeg in a medium bowl.
Beat softened butter in a large bowl until light and fluffy. Gradually beat in sour cream, then white sugar, and brown sugar. Beat in eggs, one at a time.
Stir in shredded carrots and vanilla extract. Fold in flour mixture until just combined using a rubber spatula.
Spread batter into the prepared baking pan. The batter will be shallow but will rise as it bakes.
For the streusel topping, combine walnuts, brown sugar, cinnamon, and salt in a small bowl. Stir in melted butter until crumbly. Sprinkle streusel over the batter.
Bake the cake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then lift from the pan using the edges of the foil.
Prepare the cream cheese glaze by beating the cream cheese and butter until smooth. Add vanilla extract, then powdered sugar, and beat until smooth. Thin the glaze with milk to a drizzling consistency.
Serve the coffee cake warm or at room temperature. Drizzle the glaze over the cake or each individual serving.
