INGREDIENTS
Dry Ingredients
- 🌾 2 cups all-purpose flour
- 2 teaspoons ground cinnamon

- 1 teaspoon baking powder

Wet Ingredients
- 1 ¾ cups white sugar
- 1 cup vegetable oil
- 🥚 3 large eggs
- 1 teaspoon vanilla extract
Mix-ins
- 🥕 2 cups shredded carrots
- 1 cup flaked coconut
- 1 cup chopped walnuts
- 1 (8 ounce) can crushed pineapple, drained
Frosting
- 1 (8 ounce) package cream cheese
- ¼ cup butter, softened
- 2 cups confectioners' sugar
STEPS
Gather the ingredients and preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch pan.
In a large bowl, mix together the dry ingredients: flour, cinnamon, baking soda, baking powder, and salt.
Make a well in the center of the dry mixture and add the wet ingredients: sugar, oil, eggs, and vanilla. Mix until smooth.
Fold in the shredded carrots, flaked coconut, chopped walnuts, and crushed pineapple. Combine gently.
Pour the batter into the prepared pan and bake until a toothpick comes out clean, about 45 minutes.
Allow cake to cool completely before making the frosting.
To make the frosting, beat cream cheese and softened butter until smooth. Slowly add confectioners' sugar and beat until creamy.
Spread the frosting evenly over the cooled cake, slice into squares, and enjoy.
