INGREDIENTS
Vegetables
- 🥕 1 1/2 pounds carrots
- 🥔 1 1/2 pounds Yukon gold potatoes
Cheese
- 8 ounces Gruyere or white Cheddar cheese
- 1/2 cup grated Parmesan cheese
Seasonings
- 1 tablespoon fresh thyme
- 🧂 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon nutmeg
Dairy
- 🥛 1 cup heavy cream
STEPS
Preheat the oven to 350 degrees F (180 degrees C). Grease a 9x13-inch baking dish.
In a large bowl, combine carrots, potatoes, 1 1/4 cups Gruyere cheese, Parmesan, thyme, salt, pepper, and nutmeg. Toss to combine.
Spread the mixture in the prepared baking dish.
Pour cream evenly over the carrot mixture. Cover with foil.
Bake in the preheated oven, covered, for 1 hour and 15 minutes. Remove foil.
Sprinkle remaining 3/4 cup Gruyere cheese over the top.
Bake uncovered until golden brown and vegetables are fork-tender, about 30 to 40 minutes.
Let the gratin stand for 10 minutes before serving.
