INGREDIENTS

- 🍿 5 quarts popped popcorn
- 2 cups unsalted cashews
Caramel Sauce Ingredients
- 2 cups packed brown sugar
- 🧈 1 cup unsalted butter
- ½ cup light corn syrup
- 🧂 1 teaspoon salt
- ¼ teaspoon cream of tartar
- 1 teaspoon baking soda
STEPS
Preheat the oven to 200°F (95°C).
Combine the popped popcorn and cashews in a large roasting pan.
In a large saucepan, combine brown sugar, butter, corn syrup, salt, and cream of tartar. Bring mixture to a boil, stirring constantly. Heat the syrup until it reaches 260°F (127°C) on a candy thermometer, about 6 to 8 minutes.
Remove the saucepan from heat and stir in baking soda. Immediately pour the caramel mixture over the popcorn and cashews and mix thoroughly to coat.
Bake the coated popcorn and cashew mixture in the preheated oven, stirring every 20 minutes, for 1 hour or until caramelized.
Spread the caramel corn on a parchment-lined baking sheet to cool completely. Optionally, form into balls while still warm.
