Cut the cheese slices in half and fold each piece into smaller portions. Take 1/8 of the potato mixture, flatten it in your hand, place a piece of cheese in the center, and wrap the potato mixture around the cheese. Shape into a neat ball. Repeat to make 8 pieces.
