- 🍆 1 eggplant
- 🥒 1 zucchini
Sauce and Seasoning
- 2 cups tomato sauce
- đź§„ 1 tbsp minced garlic
- đź§… 3 tbsp minced onion
- đź§‚ 1 tbsp sugar
- đź§‚ A pinch of salt
- A pinch of pepper
- A drizzle of olive oil
Cheese
- đź§€ 1 cup mozzarella cheese
STEPS
Slice tomatoes, eggplant, and zucchini into 0.3cm thick pieces.
Heat olive oil in a pan, sauté minced garlic and onion, then add tomato sauce. Simmer while seasoning with sugar and salt.
Spread a layer of tomato sauce in an oven-safe dish. Arrange sliced tomatoes, eggplant, and zucchini alternately in a circular pattern. Top with another layer of tomato sauce and sprinkle mozzarella cheese evenly.
Bake in a preheated oven at 180°C (356°F) for 25 minutes.
