INGREDIENTS

- 4 medium baking potatoes
- 🧅 2 tablespoons onion, chopped

- 🧀 1 cup cottage cheese, low-fat
- 🥛 2 tablespoons 1% milk

- 1/4 teaspoon paprika
STEPS
Wash hands with soap and water.
Preheat the oven to 400 °F (205 °C).
Scrub the potatoes.
Put the potatoes in the oven. Bake for 30 to 40 minutes until tender.
Slice each potato in half lengthwise.
Use a spoon to scoop out the inside of each potato, leaving about 1/2 inch of potato next to the skin.
Peel the onion and chop it to make 2 tablespoons chopped onion.
Mix the cottage cheese, 1% milk, chopped onion, and the scooped-out parts of the potatoes in a bowl until light and fluffy.
Divide the mix into 8 portions and stuff each potato half.
Sprinkle paprika over the potatoes.
Return the potatoes to the oven for 5 minutes to reheat.
