INGREDIENTS
Main Ingredients
- 🥟 1 (16 ounce) package large egg roll wrappers (such as Nasoya®)
- 2 (7 ounce) cans whole fire-roasted mild green chiles (such as La Victoria®), or more to taste
- 🧀 1 pound shredded pepper Jack cheese
Cooking Oil
- 🌾 1 ½ cups canola oil for frying
STEPS
Place egg roll wrappers on a work surface. Place 1 whole green chile diagonally on the wrapper. Add about 2 tablespoons of shredded pepper Jack cheese, or enough to cover the chile.
Fold the bottom corner over filling snugly, roll halfway, then fold both sides snugly inward to make an envelope shape. Moisten edges with water to seal.
Heat canola oil in a deep saucepan to 350°F. Carefully lower egg rolls, flap side down, into the oil in batches.
Fry 2 to 3 minutes, turning occasionally until golden brown. Transfer to a plate lined with paper towels to drain.
