INGREDIENTS
Dry Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 🧂 ¼ teaspoon fine salt
Wet Ingredients
- 🧈 3 tablespoons unsalted butter, room temperature
- 🍚 1 cup white sugar
- 🍚 1 tablespoon white sugar
- 1 tablespoon olive oil
- 🥚 2 large eggs
- ¼ teaspoon vanilla extract
- ¾ teaspoon almond extract

- 🌰 ½ cup chopped roasted almonds
STEPS
Whisk flour, baking powder, and salt together in a mixing bowl.
In a separate bowl, cream butter, sugar, and olive oil until smooth. Add eggs one at a time, followed by vanilla and almond extracts.
Gradually incorporate the flour mixture into the wet mixture. Stir in almonds evenly. Cover and refrigerate for 30 minutes.
Preheat the oven to 350°F (175°C). Line a baking sheet with a silicone mat.
Divide the dough into two portions and shape into logs approximately 3–4 inches wide and ½ inch high. Place on the baking sheet.
Bake for 30 minutes until golden brown. Let cool for 15 minutes.
Slice each log at a slight angle to form biscotti pieces. Reduce oven temperature to 325°F (165°C).
Bake the sliced biscotti for another 12 minutes on one side, then flip and bake for an additional 20 minutes until golden brown and crunchy.
Cool the biscotti completely on a wire rack before serving.
