INGREDIENTS
For the shortcake
- 🧈 ¼ cup unsalted butter
- 2 cups self-rising flour
- 🧂 ¼ cup white sugar
- 🥛 ½ cup milk
- 🥛 ¼ cup heavy whipping cream
For the strawberry filling
- 🍓 4 pints fresh strawberries, hulled and quartered
- 🧂 ½ cup white sugar
For the whipped cream topping
- 🥛 ¾ cup heavy whipping cream
- 🧂 1 tablespoon white sugar
- 3 drops vanilla extract
STEPS
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Melt butter in a small saucepan over medium heat until it begins to brown, stirring continuously for 2–3 minutes.
Whisk self-rising flour and 1/4 cup white sugar in a bowl. Add milk, 1/4 cup cream, and toasted butter, mixing until combined.
Turn dough onto a floured surface and roll into a 1-inch thick rectangle. Cut into six portions and place on prepared baking sheet. Brush with cream and sprinkle white sugar on top.
Bake in the oven for 15–18 minutes or until golden brown. Cool completely on a rack.
Mix sliced strawberries with 1/4 cup sugar and refrigerate for 1 hour to extract juices.
Beat 3/4 cup heavy whipping cream, 1 tablespoon sugar, and vanilla extract until soft peaks form.
Split shortcakes in half. Layer strawberries and juice on the bottom half, top with the second half, and garnish with whipped cream.
