  • Vegetables & Aromatics

    • 🧅 1 onion, diced
    • 🧄 4 cloves garlic, minced
  • Seasonings

    • 🧂 Salt to taste
    • 🧂 2 teaspoons salt
    • 1 teaspoon freshly ground black pepper
    • 1 pinch cayenne pepper, or to taste
  • Base & Fillers

    • 1 ½ cups very dry white bread crumbs
    • 🥛 1 ½ cups milk
    • 2 pounds ground chuck
  • Herbs & Cheese

    • ½ cup chopped fresh flat-leaf parsley
    • 🧀 2 ounces grated Parmesan cheese
  • Binder

    • 🥚 2 large eggs, beaten
  • Sauce

    • 🍅 3 cups tomato sauce, or to taste

STEPS

1

Preheat oven to 325°F (165°C). Grease a 9x13-inch baking dish.

2

Heat olive oil and butter in a large skillet over medium-high heat. Sauté onion with a pinch of salt until golden brown and soft, 5-10 minutes. Add garlic and sauté until fragrant, about 30 seconds. Cool onion mixture to room temperature.

3

Place breadcrumbs in a large bowl. Add milk, stir, and let sit until fully absorbed, 15-20 minutes.

4

Combine ground chuck, cooled onion mixture, parsley, Parmesan cheese, eggs, salt, black pepper, and cayenne pepper in a bowl. Remove excess milk from breadcrumbs and add to the ground chuck mixture. Mix evenly.

5

Shape meat mixture into a 3x4x10-inch loaf in the prepared baking dish. Pour tomato sauce over the loaf and into the bottom of the dish.

6

Bake in the preheated oven for about 1 hour 10 minutes, or until the center's temperature reaches 160°F (70°C). Rest for 10 minutes before slicing.
