INGREDIENTS
Dry Ingredients
- 1 ¾ cups all-purpose flour
- ¼ cup white sugar
- 1 tablespoon baking powder
- ¼ teaspoon baking soda

- 🧈 6 tablespoons cold, unsalted butter, cut into pieces
Wet Ingredients
- ½ cup pumpkin puree
- ⅓ cup buttermilk
- 🥚 1 egg
- 🥛 1 teaspoon milk

- ⅓ cup toasted pine nuts
- 2 tablespoons all-purpose flour, or more as needed
- 1 teaspoon white sugar
STEPS
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl. Add cold butter and mix using a pastry cutter until the texture resembles coarse crumbs.
Make a well in the flour mixture and add pumpkin puree, buttermilk, and pine nuts. Stir until just combined.
Sprinkle a clean surface with flour. Turn out the dough and shape into a rectangle about 1 inch thick. Fold in thirds, sprinkle with more flour as needed, and repeat for a total of 3 times. Flatten to 1 inch thick and cut into 6 squares, then diagonally into triangles.
Place the scones on the prepared baking sheet. Whisk egg and milk to create an egg wash and brush it on the scones. Sprinkle with sugar.
Bake in the preheated oven for 15-20 minutes until golden brown. Remove and transfer to a wire rack to cool completely.
