Place a skillet over medium-high heat and brush with olive oil. Swirl 1/4 cup batter into the skillet, forming a thin pancake. Cook each crepe until lightly browned, 1-2 minutes per side. Repeat for 6 crepes.

Spread 1/2 cup marinara sauce in a 9x12 baking dish. Brush with a thin layer of olive oil. Spread 1/3 to 1/2 cup filling down the center of each crepe, roll, and place in the dish. Repeat for all crepes.

Spread remaining marinara sauce over the middle third of the crepes. Sprinkle 1/3 cup Parmigiano-Reggiano cheese and drizzle with remaining olive oil.

Bake in preheated oven for 45 minutes until slightly browned and puffy. Let stand for 5 minutes before garnishing with Parmigiano-Reggiano and parsley.
