INGREDIENTS
Base Ingredients
- 1 tablespoon vegetable oil
- 🧅 1/2 cup onion, chopped
- 🧄 3 cloves garlic, minced
- 🌱 1/2 cup green peas
- 🥕 1/2 cup carrots, julienned
- 🍚 2 cups cooked rice
Seasonings
- 2 teaspoons sesame oil
- 1 tablespoon soy sauce
- 🧂 1/2 teaspoon salt
- 1 pinch white pepper
Protein
- 🍗 1 pound chicken adobo, shredded
- 🥚 1 large egg, beaten
STEPS
Heat oil in a large nonstick skillet over medium heat. Add onions and stir for 1 minute, then add garlic and stir for about 30 seconds.
Add green peas and carrots to the skillet. Cook, stirring occasionally, for 3 to 4 minutes.
Add cooked rice to the skillet, then stir in sesame oil and soy sauce. Cook while stirring for about 2 minutes.
Mix in shredded chicken adobo. Stir to coat all rice with the adobo sauce, cooking for an additional 2 minutes.
Push everything to one side of the skillet and add beaten egg. Let it set, then cut it into strips before stirring it into the rice mixture. Remove from heat.
Optional: Garnish with chopped scallions and serve warm.
