    • 2 tablespoons oil
    • 🧅 1/2 cup onion
    • 💧 1 1/2 cups water
    • 🍬 2 tablespoons brown sugar
    • 1 teaspoon ground black pepper

Combine soy sauce, white vinegar, bay leaves (if desired), and granulated garlic in a resealable plastic bag. Mix well, add chicken, marinate for at least 20 minutes in the refrigerator.

Prepare mango salsa: Mix vinegar, fish sauce, avocado oil, white sugar, and white pepper. Add red onion, jalapeño, and cilantro. Refrigerate until needed.

Remove chicken from marinade and reserve marinade. Heat oil over medium-high heat. Brown chicken on both sides for 1-2 minutes each. Remove chicken and set aside.

In the same skillet, cook onion for 1 minute. Stir in minced garlic and cook for 30 seconds. Add reserved marinade, water, brown sugar, and black pepper. Bring to a boil.

Add chicken back to the skillet. Cook uncovered for 15 minutes on low heat. Flip chicken and cook for another 10 minutes. Remove chicken and let rest.

Simmer sauce over medium heat until reduced and thickened (about 10 minutes). Remove bay leaves.

Slice chicken, return to skillet, and coat in the thickened sauce. Garnish with cilantro and green onions if desired.
