STEPS
Cut the fresh onion into wedges by halving it vertically, removing the core, and slicing into six equal parts. Separate the layers.
Slice the chicken breast into bite-sized pieces using a slanted cutting technique.
In a bowl, mix the chicken with the marinade ingredients (sake, salt, grated ginger, and potato starch) and massage well.
Heat salad oil in a frying pan over medium heat. Add the chicken and cook until both sides are golden brown, flipping occasionally. Add the fresh onion and stir-fry until coated with oil. Add sugar and ponzu sauce, then stir-fry until the sauce thickens.
