INGREDIENTS
Protein
- 🍗 1 piece skinless chicken breast (250g)
Vegetables
- 🍅 8 cherry tomatoes
- 🥒 1/2 zucchini
Seasoning
- đź§‚ Pinch of salt and pepper
- 1 tbsp all-purpose flour
- 1 tbsp salad oil
Marinade
- 1 1/2 tbsp sugar
- đź§‚ 1/2 tsp salt
- 2 tbsp vinegar
- 1 tbsp curry powder
- đź’§ 50 ml water
- 1 tbsp salad oil
STEPS
Slice zucchini into 1cm pieces and remove stems from cherry tomatoes.
Cut chicken breast into 1cm slices using a slanted knife technique. Season with salt and pepper, then coat with flour.
Mix all marinade ingredients in a bowl.
Heat salad oil in a frying pan over medium heat. Add zucchini and cherry tomatoes, sauté for about 1 minute, then push them to the side.
Add chicken slices to the same pan and cook for 2-3 minutes until both sides are golden brown. Transfer to the marinade bowl, cover with plastic wrap, and let sit for 10 minutes.
