INGREDIENTS
Chicken
- 🍗 1 piece (250g) chicken thigh
Coating
- 2 tbsp all-purpose flour
- 2 tbsp potato starch
- Enough oil for frying
Garnish
- đź§… Chopped green onion as needed
Marinade
- 1 tbsp sake
- 1 tbsp soy sauce
- đź§„ 1/2 tsp grated garlic
- 1/2 tsp grated ginger
- 1/2 tsp sesame oil
Chili Sauce
- 1 tbsp sake
- 1/2 tbsp mirin
- 🍅 1 tbsp ketchup
- 1 tbsp soy sauce
- 1/2 tsp doubanjiang
- 1 tbsp potato starch
- đź’§ 50ml water
STEPS
Cut chicken thigh into bite-sized pieces and pat dry. Place in a bag with marinade ingredients and massage well. Let sit for 15 minutes.
Add flour and potato starch to the bag with chicken and coat evenly.
Mix chili sauce ingredients in a microwave-safe bowl.
Cover the bowl loosely with plastic wrap and microwave at 600W for 1.5 minutes. Stir, then microwave for another minute until thickened.
Heat oil to 170°C and fry chicken for 4 minutes. Remove and let rest for 3 minutes. Heat oil to 180°C and fry again until crispy. Toss with chili sauce while hot and garnish with green onion.
