    • 🥬 1/2 bunch (100g) spinach

    • 🧀 30g pizza cheese

    • 30g okara powder
    • 🥛 300ml milk
    • 🧂 1/3 tsp salt
    • 🧂 Pinch of pepper
  • Cooking Oil

    • 1 tbsp salad oil

Slice the onion thinly. Trim the root of the shimeji mushrooms and separate into small clusters. Wash spinach thoroughly, wrap in plastic, and microwave at 600W for 2 minutes. Rinse with water, squeeze out excess moisture, trim the root, and cut into 4cm pieces.

Cut the chicken into bite-sized pieces and season with a pinch of salt and pepper.

Heat salad oil in a pan over medium-low heat. Place chicken skin-side down and cook until browned. Flip and lightly cook the other side. Add onion and shimeji mushrooms, and sauté until softened.

Add okara powder, milk, salt, and pepper to the pan. Stir and bring to a boil. Cover and simmer for 4 minutes.

Uncover, stir, and add butter. Mix until melted, then add spinach and cook until warmed through.

Transfer the mixture to a heatproof dish. Sprinkle pizza cheese on top and bake in a toaster oven for about 6 minutes until the cheese is golden and bubbly.
