Prepare the chicken hearts by removing white parts and thick blood vessels. Cut them open and wash out blood clots. Soak in milk for 5–10 minutes to remove odor, rinse, and pat dry.

Cut the lemon into halves lengthwise.

Mix the seasoning ingredients (sake, soy sauce, garlic, ginger) in a bowl. Add the chicken hearts and massage them with the seasoning. Let marinate for 15 minutes.

Add potato starch and all-purpose flour to the marinated chicken hearts and mix well.

Heat vegetable oil in a pot to 170°C (340°F), about 2cm deep. Fry the coated chicken hearts for 5–10 minutes over medium heat until cooked through. Serve on a plate with lemon wedges.
