INGREDIENTS
Broth and Protein
- 3 (32 ounce) cartons low-sodium chicken broth
- 🍗 3 pounds chicken leg quarters
- 🧂 1 tablespoon Hawaiian sea salt
- 🌱 1 (1/2 inch) piece fresh ginger root, sliced
Noodles and Vegetables
- 1 (8 ounce) package uncooked bean threads (cellophane noodles)
- 🧅 1 large Maui sweet onion, cubed
- 🧅 1 bunch green onions, thinly sliced
- 1 small head bok choy, chopped
STEPS
Bring chicken broth, chicken leg quarters, Hawaiian sea salt, and ginger root to a boil in a large pot over high heat.
Reduce heat to medium-low and simmer until chicken is tender and no longer pink, about 35 minutes. Remove chicken and strain broth into a new pot, discarding remaining solids.
Soak noodles in a large bowl with hot water for about 30 minutes until softened.
Cube the Maui sweet onion and stir it into the strained broth; bring to a boil again, then reduce heat to medium-low. Meanwhile, remove skin and bones from the chicken and roughly chop the chicken meat.
Add the soaked noodles, chopped chicken, green onions, and bok choy to the broth and simmer until the noodles are tender.
