INGREDIENTS
Chicken
- 2 (6 ounce) skinless, boneless chicken breast halves
Seasoning
- 🧂 Kosher salt to taste
- Freshly ground black pepper to taste
- 1 pinch cayenne pepper
Coating
- 🌾 ½ cup all-purpose flour
- 🥚 1 large egg, beaten
- 1 ½ cups panko bread crumbs
- 1 ounce Parmigiano-Reggiano cheese, freshly grated
Cooking Oil
- ¼ cup olive oil
Sauce
- 3 tablespoons unsalted butter
- 8 ounces brown mushrooms, sliced
- 🧂 Salt to taste
- 🌾 2 tablespoons all-purpose flour
- ½ cup dry Marsala wine
- 🍋 2 teaspoons lemon juice
- 2 cups chicken broth
- 1 pinch ground black pepper
- 1 pinch cayenne pepper
- 1 tablespoon chopped flat-leaf parsley
STEPS
Gather all ingredients.
Flatten chicken breasts to about 1/4-inch thickness with a meat pounder.
Season chicken with salt, pepper, and cayenne; coat with flour.
Coat floured chicken with egg and panko crumbs, pressing gently to adhere.
Sprinkle Parmigiano-Reggiano cheese over breaded chicken and refrigerate.
To make the sauce, cook mushrooms in butter and season with salt.
Add flour, Marsala wine, lemon juice, and chicken broth to pan. Simmer until thickened.
Heat olive oil and pan-fry the breaded chicken until golden and cooked through.
Serve chicken with Marsala sauce, garnished with parsley.
