INGREDIENTS
Base Ingredients
- 🍗 1 pound ground chicken
- 🧅 1 small yellow onion, finely chopped
- 🍞 ½ cup panko
- 🧀 1/4 cup grated Parmesan cheese
- 1/4 cup parsley
- 🥚 1/4 cup mayonnaise
- 🧄 3 cloves garlic, minced
- 2 teaspoons fresh thyme leaves
- 2 teaspoons Worcestershire sauce
- 🧂 1 1/4 teaspoons kosher salt
- 🧄 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
Topping Ingredients
- 1/4 cup ketchup
- 2 teaspoons light brown sugar
- 2 teaspoons Dijon mustard
- 1 teaspoon apple cider vinegar
STEPS
Preheat the oven to 350°F (175°C). Lightly grease an 8-x 4-inch loaf pan with cooking spray.
Mix ground chicken, onion, panko, Parmesan cheese, parsley, mayonnaise, minced garlic, thyme, Worcestershire sauce, salt, garlic powder, and black pepper in a large bowl until just combined. Avoid overmixing.
Transfer the chicken mixture to the prepared loaf pan and smooth the surface evenly.
Prepare the topping by combining ketchup, brown sugar, Dijon mustard, and apple cider vinegar in a small bowl. Evenly spread this mixture over the top of the meatloaf.
Bake the meatloaf uncovered in the preheated oven for 50 to 55 minutes or until the internal temperature reaches 165°F (73°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
