INGREDIENTS
Protein
- 🍗 3 pounds chicken pieces, skin removed
Seasoning
- 🧂 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- thyme or sage
Vegetables
- 🧅 1 onion, chopped
- 1 cup celery, chopped
- 🥕 3 large carrots, thinly sliced
Grains
- 4 cups egg noodles, dry
STEPS
Place chicken pieces in a large kettle. Cover completely with water, cover, bring to a boil, reduce heat, and simmer for 2 to 3 hours.
Cool the chicken for 10 to 15 minutes after cooking, then separate bones from meat and break meat into bite-sized pieces.
Remove fat from broth by skimming with a spoon, adding ice cubes, or blotting the top with paper towels.
Put chicken meat, seasonings, and vegetables into the stock. Bring broth to a boil, reduce heat, and cook for 15 to 20 minutes until carrots are crispy-tender.
Add noodles and boil uncovered for about 6 to 7 minutes, stirring occasionally to prevent noodles from sticking.
Ladle the soup into bowls and serve immediately.
Refrigerate or freeze leftovers within 2 hours. Use refrigerated soup within 2 days. When reheating, bring to a boil.
