INGREDIENTS
Burger mixture
- 🍗 12 ounces boneless skinless chicken thighs or breasts, cut into 1-inch pieces
- 🧀 4 ounces mozzarella cheese, shredded
- 🧂 1 1/4 teaspoons kosher salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon granulated garlic
- 1/4 teaspoon dried oregano
- 2 tablespoons panko breadcrumbs
- 1 tablespoon olive oil
- 🍅 1/4 cup marinara or other prepared tomato sauce
Burger buns
- 🧈 3 tablespoons butter
- 🧄 2 cloves garlic, crushed
- 2 teaspoons parsley
- 🧂 1 pinch kosher salt
- 4 teaspoons Parmigiano-Reggiano, or more to taste
Breadcrumbs coating
- 1/4 cup panko breadcrumbs
- 1/4 cup olive oil
Toppings
- 🍅 1 cup marinara sauce, divided
- 🧀 1/2 cup mozzarella cheese
- 2 teaspoons Italian parsley, or as needed
STEPS
Combine chicken, mozzarella, salt, pepper, garlic, oregano, breadcrumbs, olive oil, and marinara in a food processor and pulse until finely ground.
Transfer mixture to a bowl, cover, and chill for 30 minutes.
Shape mixture into 4 patties using wet hands, wrap in plastic, and refrigerate until ready.
Preheat oven to 400°F (200°C). Line a sheet pan with foil.
Mix butter, garlic, parsley, and salt, then spread on burger buns. Dust with grated Parmigiano-Reggiano. Toast in oven until lightly browned, 7-10 minutes.
Press patties to bun size and coat each side with breadcrumbs.
Heat oil in a skillet, cook patties until golden brown, flip, add marinara and mozzarella, cover, and cook until chicken reaches 150°F, about 2-3 minutes. Rest for 3 minutes.
Assemble burgers with buns, marinara, chicken patties, parsley, and serve immediately.
