INGREDIENTS

- 1 pound ground chicken
- 🧅 1 cup onion
- 🥚 1 large egg
- 1/4 cup fresh parsley
- 1 (15.5 ounce) jar marinara sauce
- 3/4 cup seasoned bread crumbs
- 🧀 1/3 cup grated Parmesan cheese
- 1 1/2 teaspoons Italian herb seasoning blend
- 🧀 1/3 cup shredded mozzarella cheese
- 🧈 1 1/2 tablespoons unsalted butter
- 1/3 cup panko bread crumbs
- 1/2 teaspoon garlic powder
STEPS
Preheat oven to 350°F (180°C). Line a loaf pan with parchment paper or foil.
In a large mixing bowl, combine ground chicken, onion, garlic, egg, parsley, 1/2 cup marinara sauce, seasoned bread crumbs, Parmesan cheese, Italian seasoning, salt, and pepper. Mix well and shape gently into a loaf in the prepared pan.
Bake for 45 minutes in the center of the preheated oven.
Remove from oven, brush with 1/4 cup marinara sauce, and sprinkle mozzarella cheese evenly on top.
Return to oven and bake for an additional 15 minutes. Let cool on a rack for about 10 minutes.
While the meatloaf cools, melt butter in a skillet over medium heat. Add panko and garlic powder, cooking and stirring until panko is lightly toasted (about 3-4 minutes). Remove from heat and let cool for about 5 minutes.
Stir in remaining 2 tablespoons Parmesan cheese and 1 tablespoon parsley to the panko mixture.
Serve meatloaf topped with panko mixture, remaining marinara sauce, and optional garnish with parsley or fresh herbs.
