INGREDIENTS
Chicken and Coating
- โ cup all-purpose flour
- ยผ teaspoon fresh ground black pepper
- ยผ teaspoon paprika
- ๐ 1 pound skinless, boneless chicken breast halves, pounded thin and cut into 2-inch pieces
Cooking Fat and Aromatics
- 2 tablespoons olive oil
- ๐ง 1 clove garlic, minced
- ๐ง 4 tablespoons butter, divided
Sauce
- ๐ท 1 cup dry white wine
- โ cup chicken broth
- ๐ ยผ cup fresh lemon juice
- 2 tablespoons capers
- ๐ฟ 2 tablespoons chopped fresh parsley
Pasta
- ๐ 1 (8 ounce) package angel hair pasta, cooked and drained
STEPS
Whisk together flour, pepper, and paprika in a shallow dish. Dredge chicken pieces until evenly coated.
Heat oil in a large skillet over medium-high heat. Add minced garlic; cook until golden and fragrant, about 1 minute. Remove garlic and set aside.
Melt 2 tablespoons of butter in the same skillet. Add chicken and cook until browned, about 5 minutes per side. Remove chicken and set aside.
Pour wine into the skillet. Use a wooden spoon to scrape browned bits from the pan. Allow wine to reduce by half, about 5 minutes.
Add chicken broth, previously reserved garlic, lemon juice, and capers. Cook for an additional 5 minutes.
Stir in parsley and the remaining 2 tablespoons of butter. Reduce heat to medium, return chicken to the skillet, and cook until sauce thickens, about 15 minutes.
While chicken is cooking, bring a large pot of salted water to a rolling boil. Cook angel hair pasta for 4-5 minutes and drain.
Transfer chicken to a serving dish. Toss pasta in the skillet with the remaining sauce, then portion pasta onto plates and top with chicken.
