INGREDIENTS
Main Ingredients
- 1 package (3 ounces) Ramen noodles
- 1 cup red or green bell pepper
- 🧅 1/4 cup scallions, minced
- 🥜 1/2 cup dry roasted peanuts, unsalted
- 🍗 2 cooked chicken breast, chilled and cut into cubes
- 🥬 8 cups cabbage, shredded
Dressing Ingredients
- 1 flavor packet from ramen noodles
- 🍬 2 tbsp sugar
- 🍶 3 tbsp vinegar
- 3 tbsp olive oil
STEPS
Wash hands with soap and water.
Break up ramen noodles into small pieces and set aside.
In a large bowl, add bell peppers, scallions, unsalted peanuts, and any additional vegetables of choice. Mix in chilled, cooked chicken and shredded cabbage.
In a small bowl, combine sugar, vinegar, olive oil, and the flavor packet from the ramen noodles to make the dressing. Stir well.
Pour the dressing over the salad and gently mix to coat evenly. Sprinkle the broken noodles on top.
Serve the salad cold. Enjoy!
