INGREDIENTS

- 🍚 4 bowls cooked rice (600g)
Protein
- 🍗 500g chicken thighs
Vegetables
- đź§… 2 onions (400g), minced
- 🍅 2 tomatoes (400g), chopped
- đź§„ 2 cloves garlic, minced
- 2 pieces ginger, minced
Dairy
- 🥛 200g unsweetened yogurt
Oil
- 3 tbsp salad oil
Liquid
- đź’§ 200cc water
Seasoning
- đź§‚ Salt and pepper to taste
- đź§‚ 2 tsp salt
- 2 tsp coriander powder
- 2 tsp cumin powder
- 2 tsp turmeric powder
STEPS
Cut chicken into bite-sized pieces.
Mince onions, garlic, and ginger. Chop tomatoes into 2–3cm pieces.
Heat salad oil in a pan and sauté garlic, ginger, and onions over medium-high heat for 10–15 minutes until golden brown. Add tomatoes and cook for 3 minutes while mashing.
Add spices and stir until well combined. Add chicken and water, bring to a boil, then add yogurt and mix. Cover and simmer on low heat for 10 minutes until chicken is cooked through.
Serve curry over rice in a bowl.
