INGREDIENTS
Mushrooms
- 🍄 1 pound medium button or mini-bella mushrooms
Dairy
- 2 tablespoons unsalted butter
- 1 cup whipping cream
- 1 tablespoon finely shredded mozzarella or Parmesan cheese (Optional)
Vegetables
- 🧅 1 large onion, finely chopped
- 🧄 1 large clove garlic, minced
Meat
- 1 cooked boneless chicken breast half, finely diced
Seasonings & Spices
- 🧂 1 ½ tablespoons Diamond Crystal® Kosher Salt
- ¾ teaspoon coarsely ground pepper
Other
- 1 tablespoon all-purpose flour
- 5 tablespoons chopped fresh parsley, divided
STEPS
Preheat the oven to 350 degrees F.
Remove stems from mushrooms and scoop out insides of each mushroom. Finely chop stems and centers.
Melt butter in a skillet, add onion, garlic, chicken, chopped mushrooms, kosher salt, and pepper. Cook for 4 minutes until fragrant.
Add flour, cream, and 3 tablespoons of parsley to the skillet. Cook and stir until bubbly and thickened. Remove from heat.
Spoon mixture evenly into mushroom caps and place them in a lightly oiled baking dish.
Bake for 10 minutes, garnish with parsley and cheese, and bake for an additional 5-10 minutes until cheese melts.
