    • 150 ml chicken broth
    • 100 g all-purpose flour

  • Soup Sauce

    • 1/2 tbsp doubanjiang
    • 1 tbsp chili powder
    • 2 cloves minced ginger

    • 1/2 tbsp soy sauce
    • 1/2 tbsp miso
    • 40 ml fried oil
    • 2 cups chicken broth

Place all chicken soup base ingredients in a pot and bring to a boil. Skim off scum and simmer for about 10 minutes. Transfer chicken and broth to a bowl and cool quickly. Cover with paper towels to prevent air exposure.

Mix all batter ingredients in a large bowl.

Coat the chicken with the batter and deep-fry at 200°C until crispy. Drain excess oil. Repeat for the second chicken thigh.
