INGREDIENTS

- 1 tbsp olive oil
- 🧅 1 medium onion, thinly sliced
- 1 tsp garam masala
- 1/4 tsp ground cumin
- 1/8 tsp black pepper
- 🍅 1 tbsp tomato paste
- 1 1/2 tsp ginger paste
- 1/2 tsp garlic paste
- 1/2 medium fresh jalapeño chile pepper
- 2 (15-ounce) cans chickpeas, rinsed and drained
- 1 (8-ounce) can tomato sauce
- 1/4 tsp sugar
- 🧂 1/4 tsp salt
- 1/8 tsp cayenne pepper
- 3/4 cup water
- 1/4 cup half and half
- 1/4 cup fresh cilantro
- 4 cups hot cooked basmati rice
STEPS
Gather all ingredients.
Heat oil in a large skillet over medium-high heat. Add onion and carrots, cooking for 5–6 minutes until tender.
Add garam masala, cumin, and black pepper; stir until fragrant, about 30 seconds.
Add tomato paste, ginger paste, garlic paste, and jalapeño pepper; cook and stir for 2 minutes.
Add chickpeas, tomato sauce, sugar, salt, and cayenne pepper. Cook over medium-high heat until hot, then reduce heat to low and simmer for 10 minutes.
Add water and half-and-half. Continue cooking on low heat for 1 minute; add more water for a saucier dish, if desired.
Garnish with cilantro and serve warm with hot cooked basmati rice or naan.
