In a bowl, mix silken tofu, mayonnaise, salt, pepper, and mentaiko until the tofu becomes smooth. Add the stir-fried ingredients and mix well.

Transfer the mixture to a heatproof dish, sprinkle pizza cheese on top, and bake in a toaster for 4–5 minutes until golden brown. Garnish with parsley.
