INGREDIENTS
Gingerbread Dough
- 🧈 ¾ cup butter
- ⅞ cup packed light brown sugar
- 🍋 1 teaspoon lemon zest
- 🍋 1 ½ tablespoons lemon juice
- ½ cup molasses
- 🥚 2 large eggs
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 tablespoon ground ginger
- 2 teaspoons ground allspice
Royal Icing
- 🥚 6 egg whites
- 🍭 4 (16 ounce) packages confectioners' sugar, sifted
STEPS
Prepare cardboard templates for the gingerbread house: side wall, end wall with gable, and roof pieces.
Cream butter and sugar in a large bowl. Add lemon zest, lemon juice, molasses, and eggs. Then incorporate flour, baking powder, ginger, and allspice. Wrap dough and refrigerate for 1 hour.
Preheat oven to 375°F (190°C).
Roll out the dough and cut into house sections using templates. Transfer to baking trays.
Bake for 10 minutes or until crisp. Let the gingerbread cool and set for 8 hours or overnight.
Whisk 2 egg whites and gradually beat in 5 cups of confectioners' sugar to create icing for construction.
Construct the house walls by piping icing onto the cake board and along the edges of each wall piece. Let set for 2 hours.
Attach the roof pieces with icing and secure along the crest. Let set for 8 hours or overnight.
Prepare decorating icing by whisking 4 egg whites with the remaining confectioners' sugar. Use to decorate the house with candies and a dusting of sugar.
