INGREDIENTS
Meat
- 1 pound ground beef
- 1 pound hot dogs, sliced
Vegetables
- 🧅 1 large onion, diced
- 1 cup green peppers
- 🧄 4 cloves garlic, minced
Spices and Seasonings
- 🧂 2 teaspoons kosher salt
- 3 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground black pepper
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon dried oregano
Canned and Packaged
- 1 (28 ounce) can crushed tomatoes
- 💧 2 ½ cups water
- 2 cups elbow macaroni
- 8 ounces white Cheddar cheese
- 8 ounces shredded Monterey Jack cheese
Oil
- 1 tablespoon olive oil
STEPS
Add olive oil to a pot and heat. Cook beef for 2 minutes, breaking up with a spatula.
Add onions and salt. Cook until beef crumbles and onions are translucent, about 5 minutes.
Add chili powder, cumin, paprika, black pepper, cinnamon, cayenne, oregano, and garlic. Cook for 2 minutes.
Add green peppers, hot dogs, crushed tomatoes, and water. Simmer for at least 30 minutes, stirring occasionally.
Bring salted water to a boil. Cook elbow macaroni for 8 to 11 minutes until al dente.
Preheat oven to 400 degrees F (200 degrees C).
Mix macaroni into the pot of chili. Transfer the mixture into a baking dish.
Combine Cheddar and Monterey Jack cheeses. Mix 60% into the casserole and spread the remainder on top.
Bake in preheated oven for 30 to 35 minutes. Rest for 15 minutes before serving.
