INGREDIENTS
Vegetables
- 🌱 2 stalks asparagus (40g)
- 🍄 1 pack enoki mushrooms (100g)
Seaweed
- 🌿 1 tbsp dried seaweed
Oil
- 1/2 tsp sesame oil
Soup Base
- 1/3 tsp chicken stock powder
- đź§‚ 1/3 tsp salt
- Pinch of pepper
- 1/2 tsp grated ginger
- đź’§ 300ml water
STEPS
Trim the asparagus and cut into bite-sized pieces. Separate the enoki mushrooms into small clusters.
Rehydrate the dried seaweed in water for a few minutes and drain.
Heat sesame oil in a pot over medium heat. Add grated ginger and sauté until fragrant.
Add water, chicken stock powder, salt, and pepper to the pot. Bring to a boil.
Add asparagus, enoki mushrooms, and rehydrated seaweed to the pot. Simmer for 2–3 minutes.
Serve the soup hot and enjoy.
